- You need 4 cups of full cream milk.
- Prepare 2-3 tbsp of freshly squeezed lemon juice.

- Heat milk until simmering and starts to boil.
- Reduce heat. Add lemon juice one tablespoon at a time at intervals stirring constantly.
- Cook until mixture curdles. Stir until the mixture separates.
- Remove from the heat. Put large sieve over a bowl. Put clean kitchen towel on the sieve and pour the mixture on thr towel.
- Let the mixture strain for 15 minutes.
- Transfer mixture to blender and blend until mixture is silky smooth.
- Refrigerate if not using immediately, use to make cheese cake and other desserts.
