Fun Way to Cook Delicious Soup with nothing in it (Vegan)

Soup with nothing in it (Vegan). This vegan pea soup is not to be confused with vegan split pea soup, we have a recipe for that too, but that is very different. But really, I had nothing to worry about, the end result is thick enough and certainly creamy enough. This vegan lentil soup is a blended Middle Eastern style lentil soup, made with red lentils and blended for a super creamy and delicious soup!

Soup with nothing in it (Vegan) This richly flavored soup is hearty and satisfying and makes a delicious plant-based appetizer or main. I kind of had the idea that I would have a bright green soup if I made any kind of soup with the word 'pea' in the title! In creating this vegan tofu noodle soup, I used a mixture of olive oil with just a little bit of coconut oil to improve the mouthfeel. Soup with nothing in it (Vegan) step by step

  1. Wash and chop all vegetables.
  2. Put all ingredients in large pot or pressure cooker(cooks faster).
  3. Cook until tender.
  4. Transfer cooked vegetables to blender little by little, releasing steam from the top, so the hot soup doesn't splash you and blend until creamy, then put blended soup in another pot.
  5. Repeat above step until all soup has been blended.
  6. Serve in bowls. Top with french fried onions, sprouts or topping of your choice. Also good with nutrela or TVP, veggie protein chunks..

I put my new Blendtec to good use today making a pretty amazing fiber rich juice. I didn't even have to cut anything I I put in it. Clean up is so easy too, because nothing ever sticks it! Making soup with the IP always turns out perfect too. With this recipe, I sautéed the onions, carrots, garlic, ginger, and spices together for a few minutes.
