  2. You need 1 cup of veggie stock.
  3. It's 3 oz of tomato paste.
  4. Prepare 1 clove of garlic.
  5. It's 1 cup of chickpeas.
  6. Prepare 1/2 cup of tomato.
  7. You need 1/2 cup of cauliflower.
  8. It's 1 cup of instant brown rice.

Vegetarian Curry instructions

  1. Heat a non stick pan over medium high.
  2. Place a tbsp of stock in pan, sauté onion and garlic for 3 minutes.
  3. Add curry powder, remaining stock, chickpeas, tomatoes, cauliflower and tomato paste.
  4. Simmer for 10 minutes and serve over rice.
