- It's 1 cup of Basmati Rice.
- You need 1 cup of White mushroom.
- You need 1 cup of Soya chunks.
- Prepare 1/4 cup of green peas.
- It's 1 of medium Onion thinly sliced.
- It's 1 of medium Tomato finely chopped.
- It's 1 tablespoon of Ginger Garlic paste.
- You need 2 of Green chillies slit lengthwise.
- It's 1/4 cup of Yogurt (curd) OR Coconut Milk (vegans can use dairy free yogurt).
- It's 1 1/2 cups of Water (depends on the quality of the rice).
- It's 2 tablespoon of Oil or ghee (clarified butter).
- You need to taste of Salt.
- Prepare of DRY SPICES.
- You need 1/4 teaspoon of Turmeric powder.
- You need 1/2 teaspoon of Red chilli Powder.
- Prepare 1/2 teaspoon of Coriander Powder (optional).
- Prepare 1.5 teaspoon of Biryani Masala or Garam Masala Powder.
- It's of WHOLE SPICES.
- Prepare 1/2 teaspoon of Cumin seeds (jeera).
- It's 1 of Bay Leaf.
- You need 1 inch of Cinnamon Stick.
- Prepare 2-3 of Cloves.
- It's 2 of Cardamom.
- Prepare 1 of Big Cardamom.
- Prepare 7-8 of Black peppercorns.
- It's 1 of Star Anise (optional).
Soya Mushroom Pulao step by step
- In a pressure cooker Pot, Add Oil and once it’s hot add whole spices like cumin, bay leaf, cinnamon stick, black peppercorns, star anise, cardamoms and cloves. Once they sizzle, add ginger garlic paste and saute for 30 secs..
- Then add sliced onions and green chilies, saute for 2-3 minutes until onions turn light brown in color, stir regularly. Next add tomatoes and green peas, and saute for a minute till they become soft. Add in the dry spices like turmeric,red chilli powder, coriander powder and biryani powder to it and saute for just 30 secs. Make sure spices dont burn..
- Then add yogurt and mix everything together, also deglaze the pot. If anything is stuck to the bottom of the pot, scrape it so no burnt bits should be at the bottom..
- Add the sliced mushrooms and soya chunks and mix again gently..
- Add rinsed Basmati Rice, water, salt and give a stir. Close the pressure cooker lid and cook for 2 whistles on medium flame. Let the pressure release naturally and fluff with a fork..
